Quick tip: Spaghetti squash "pizza" casserole

A quick tip today...

Back when I made the spaghetti squash "pizza" bowls, I told my husband about it and he immediately improved on it by turning it into a casserole: layer the cooked spaghetti squash in a baking dish with sauce, spinach, cheese, and any other seasonings you'd like, before doing the second bake. Better control over ingredient proportions and serving size, and if you still have excess liquid, easy to leave it behind in the pan!

I finally made my own last night so I thought I'd share the idea here. Essentially you'll follow the original recipe, halving and baking the squash first, but instead of scruffing up the strands and putting the other ingredients in with them, put it all in an 8" square baking dish. Perform the second bake as described, until the cheese is melted and browning. Let it rest a few moments before serving so it sets a little bit.
