Brie-apple melt
I bought brie to take to a friend's place and ended up not taking it, so I had brie to eat. When I think of turning brie into a meal, I think of melting it over Granny Smith apple slices on a crusty roll.
So, last night, that is what I did. I was out running errands and picked up ciabatta rolls, an apple, and arugula before coming home. I sliced a ciabatta roll in half, spread each side with grainy mustard, covered it with apple slices (in total, a little less than half of the fairly large apple I'd bought), and covered those with brie slices.
Into the toaster open-faced to melt the brie and warm the roll and apple. When it came out, I dumped a pile of arugula on one half and closed it into a sandwich.
About 20% of the brie and apple fell onto the plate while I was eating, but for what it was, that seems all right.
I realized this morning I'd meant to caramelize onion to include in the sandwich, but didn't think about it (it was late enough I would likely have skipped that anyway). I still have plenty of apple, arugula, and ciabatta, so I suppose I'll have to get more brie.
